Dairy free white chocolate crackle slice with glace cherries (vegan)

Our delicious dairy free white chocolate crackle slice with glace cherries is a cross between favourite party foods. A little bit like a white chocolate crackle, and a little bit like white Christmas slice. The best part is that our version is made free from top allergens, including dairy, nuts and gluten. And it’s vegan too. The addition of sweet glace cherries makes this red and white slice perfect for Christmas celebrations, but it’s just as good any time of the year.

Allergy-friendly slice ingredients

It’s easy to make an allergy-friendly version of traditional chocolate crackle slice by substituting some of the main ingredients with allergy free versions. You’ll need:

  • 4 cups gluten free puffed rice cereal
  • 1/2 cup sifted icing (confectioners) sugar
  • 450g (1 lb) dairy free, nut free, gluten free chocolate
  • 175g (6.2 ounces) melted Copha (coconut oil)
  • 300g (2 cups) glace (candied) cherries

Rice Bubbles / Rice Krispies / Rice Puffs

If you don’t have to worry about gluten, you can use a normal puff riced cereal like Kellogg’s Rice Bubbles in this recipe. Just be sure to check the ingredients and any precautionary allergen labels carefully to make sure they are suitable for you. However, for a gluten free version we use Orgran Rice Puffs which are gluten free, dairy free and nut free. Another option is Freedom Foods Rice Puffs, but these do have a “may contain” statement for milk.

Allergy friendly dairy free white chocolate

Our favourite nut free, dairy free and vegan white chocolate is Sweet William. To make this dairy free rice crackle slice we used Sweet William white chocolate baking buttons, which are easy to melt in the microwave. Sweet William is completely nut free which is really important for us with both peanut and tree nut allergies.

Other allergy friendly white chocolate brands are:

Some dairy free and vegan white chocolate brands contain nut “milks”. For example Loving Earth Raw Organix White Chocolate contains cashew, hazelnut and almond. This may be an option for you if you don’t have a tree nut allergy.

Copha

Copha is a well known Australian vegetable shortening product. It is really just a butter shaped block of hydrogenated coconut oil with 1% soy lecithin. If you need to avoid soy, you can substitute plain coconut oil for the Copha instead.

Glace cherries

Glace cherries are also known as candied cherries. We buy Sunbeam brand from the baking aisle at the supermarket, which are gluten free. They do have a warning about other allergens packaged at the same facility. If you can’t find a safe glace cherry brand that you are comfortable with, you could also substitute the same quantity of red allergy-safe confectionery, like red raspberries, instead.

Finally, make sure to use gluten free icing sugar.

Method

Grease and line a 28 x 18 cm (11 x 7 inch) slice or lamington tray with baking paper (parchment paper). Allow a few centimetres of paper to extend over the edges on 2 sides.

Place 4 cups of rice cereal and 1/2 cup of sifted icing sugar in a large mixing bowl and stir to combine.

Melt the 450g of allergy-friendly white chocolate in a a microwave safe bowl on medium heat for around 3 minutes. Add the melted Copha to the chocolate and stir well.

Pour the melted chocolate mixture over the dry ingredients and stir to combine. Then stir through the glace cherries.

Spoon the mixture into the prepared pan and press down well with the back of a spoon or spatula.

Place the pan in the fridge to cool for around 30 minutes.

Remove the pan from the fridge and let stand at room temperature for about 5 minutes before cutting the slice into squares and serving.

Makes approximately 20 large pieces.

Left over chocolate crackle slice will keep in an air tight container in the fridge for up to a week.
