Allergy friendly pancake recipes

Many people think that pancakes have to be made with eggs and milk. Or that allergy friendly or vegan pancakes will need lots fo fancy ingrediets to make up for noit using these staple ingredients.

It’s actually really easy to make allergy friendly pancakes without egg, milk, nuts, soy and even wheat. We make our easy egg and dairy free pancake recipe often. This version regularly adds fresh grated granny smith apple and cinnamon for a subtly spiced twist on plain pancakes. And just like the original version, it’s easy to just swap the wheat flour for gluten free or change the type of non-dairy milk or oil to suit your allergies.

Vegan pancake ingredients

To make these allergy friendly pancakes you’ll need:

  • 1 cup of self-raising flour (gluten free if required)
  • 2 Tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 1 green granny smith apple, peeled and grated
  • 3/4 cup plus 2 Tablespoons of oat milk or other non-dairy milk
  • 2 tablespoons vegetable oil
  • 2-3 drops vanilla essence
  • dairy free spread to grease the pan

I use oat milk instead of soy to suit our family, but you can substitute for any other non-dairy milk that you normally use.

Method

Place the dry ingredients (flour, sugar and cinnamon) in a bowl and stir to combine.

Add the grated apple, non-dairy milk, oil and vanilla and whisk to form a batter.

Preheat a non-stick pan and melt some dairy free spread (eg Nuttelex) to coat the pan. Add spoonfuls of the pancake batter to the pan to make pancakes of the size you like (smaller pikelet size works better about 3-4 inches or 8-10cm). When bubbles start to show through, flip and cook the other side of the pancake until browned.

This recipe makes enough batter for about 10-12 small pancakes. For more batter, simply double the recipe.

Tip: Cook a few small pancakes at a time and transfer to a tray to keep warm in the oven while you cook the next batch, until you have enough to make a stack.
